As every parent knows, it's difficult to get the kids to eat fish. I tried these cute egg halves at Eastern, as an attempt to get them to eat some fish. They said they liked the carrot eggs, even had 2 each. When I asked to try the salmon flower in the middle they kindly said no thanks. Most probably as I mentioned fish in my question, but I had to try.

Ingredient List for 6 servings:

8 Parsley leaves

2 tablespoons Mayonnaise
Instructions:

Hard boil the eggs for approximately 5-6 minutes.

Let cool in cold water

On the lower part with the egg yellow, spread some mayonnaise on each egg half.

Cut triangles of the salmon that looks like carrots and place on the mayonnaise on each egg half.

Place a parsley leaf on the top of each salmon piece to form a carrot.
