Cut the chicken in small pieces.
Mix the egg, salt, pepper, cornstarch, flour and soy sauce. Add water little by little so make a smooth batter.
Marinate the chicken with the batter, let it rest for 30 minutes.
Press the garlic cloves and pour in a bowl. Add the rest of the ingredients for the sauce and mix well.
In a frying pan heat up the oil. Remember not to have the stow fan on.
Add the chicken little by little and fry until golden brown. Place the chicken pieces on paper and drain.
In a frying pan heat up the sauce until boiling. Add the chicken and stir until the sauce is thickening. Turn off the heat and let the chicken rest for 5 minutes.
Before serving, sprinkle small tranches of leek on top of the chicken.
