A little while ago I was having guests over for a fika, and found out that not everyone can eat gluten. I was planning to make a carrot cake as I often do when having people over. It got me thinking, it can't be that complicated to find a recipe that fits everyone. Said and done. After a little research online I prepared this wonderful carrot cake, and I must say, everyone loved it. Will definitively make it next time someone ask me to make a carrot cake again.
