Put the lasagna plates in a deep bowl.
Grate the cheese and the mozzarella cheese.
Wash the spinach and arugula in water and put it in a bowl on the side.
Peel the zucchini, and peel long slides with a potato peeler or a cheese slicer. Put the slices on the side in a bowl.
Cut the ham in thin slices so it will fit on the lasagna plates.
Start the oven at 200 degree Celsius.
Now it is time to start preparing the cannelloni. Take up the lasagna plates from the water. If the plates are too long for the form that you are going to use, it is a good idea to cut them in half on the short side.
Now put 1 slice of ham on one of the lasagna plates, then put some zucchini slices on the lasagna plate so it cover the surface. Sprinkle some arugula and spinach, and then sprinkle some mozzarella cheese on top.
Roll the lasagna plate from the short side so you make a roll. Then put the cannelloni in an oven form. Continue the same procedure with as above with the rest of the lasagna plates.
When the oven form is full with all the cannelloni, pour the tomato sauce on top. Make sure the sauce goes down between the cannelloni, and as well on the sides. If you have some mozzarella cheese left sprinkle it evenly on top of the cannelloni together with the grated cheese.
Put the oven form with the cannelloni in the middle of the oven for approx 20-30 minutes. Before you take them out of the oven test to stick a sharp knife through one cannelloni to see so it is soft.
Take out the cannelloni from the oven and serve it warm together with a salad.
