This is a homemade Neapolitan pizza dough, topped with tasty cheese and creamy mozzarella cheese. It's a mix of a pizza Bianco and a pizza Margaretha as it doesn't have any creme fraiche or tomato sauce, only olive oil and cheese.

Ingredient List for 2 servings:

446 gr Tipo 00 flour

4 gr Fresh yeast

255 gr Sparkling water

10 gr Salt

10 gr Olive oil

50 gr Grated mozzarella cheese

100 gr Grated cheese
Oven temperature:
400 degrees Celsius
Instructions:

Pour the flour in a baking machine.
Button
Crumble the yeast in the flour.

Pour in the water very slowly and shake the bowl so the water goes in the flour as much as possible.

Start the machine on the lowest speed and let it run for 5 minutes.

Add the salt and let it run 5 more minutes.

Stop the machine and add the olive oil and start on the machine with speed nr 2. Let it run for 5 minutes.

Stop the machine and take out the dough. Rub olive oil around the dough and let it rest on plane surface for 20 minutes.

Divide the dough in 2. Roll the dough gently in to balls.

Place in a container with a lid, big enough so the dough can grow in size. Let it rest in room temperature for 2 hours.

Place in the fridge for minimum 24 hours.

Take out the pizza doughs from the fridge 4 hours before you're going to Cook it.

On a baking paper form 2 pizzas with quite big edges. Make sure you have flour underneath.

Preheat the pizza oven on 400 degrees Celsius.

Brush the pizzas with some olive oil.

Spread evenly the grated cheese and mozzarella on the pizzas.

Before placing the pizza in the oven, sprinkle flour on the pizza spatula. Transfer over to the spatula, and turn it around to make sure it's not stuck.

Put in the oven and cook for 4 minutes.

Take out and serve immediately and enjoy your delicious cheesy pizza.
