In a kitchen aid pour the flour, and crumble the fresh yeast in the flour.
Pour slowly the the water in the bowl and at the same time shake the bowl so the water soaks in the flour.
Turn on the kitchen aid on the lowest speed. Let it run for 5 minutes.
Pour in the salt and let the kitchen aid run for another 5 minutes.
Turn off the machine and pour the olive oil over the dough.
Turn on the kitchen aid on speed nr 2 and let it run for 5 minutes.
Turn the machine off and take out the dough. Roll it in to a ball and cover the surface with some olive oil.
Let it rest in room temperature for 20 minutes.
Divide the dough in two and roll in to balls.
Place in big boxes with a lid. Let them rest in room temperature for 2 hours.
Place the boxes in the fridge during 1-2 days.
Take out the dough boxes 4 hours before you're going to cook them. Let the rest in room temperature.
Place a pizza stone in the oven and start it at 400 degrees Celsius or as high as your oven can reach in temperature.
By hand form 2 round pizzas the sizes as your pizza stone is.
Place on a lightly floured baking paper.
Brush the pizza bottoms with olive oil.
Peel and cut the onion and spread evenly on the pizzas.
Cut the gorgonzola cheese in slices and place evenly on the pizzas.
Place some flour under the edges of the pizza and gently turn the pizza around so it's not stuck.
Place on the pizza stone in the oven and cook for 4 minutes. Might be longer depending on the temperature.
Take out the pizza and slice it in 8 and enjoy.
