Preheat the oven at 180 degrees Celsius.
Separate the egg yellows from the egg whites.
Whip the egg whites to a hard foam with an electrical mixer.
Continue whipping while adding the sugar and vanilla sugar. Continue until you have a shiny mixture.
Add the saffron and the yellow color and mix.
Add the almond flour, flour and salt and mix together to cookie dough.
Place a baking paper on a baking sheet.
Form small balls and pace on the baking paper.
Place in the middle oven for 10 minutes.
Take it out and let it cool down.
