I like do prepare this homemade rice salad with shrimps and tuna when we are going on a road trip. Just prepare the rice, heat up the shrimps, chop some vegetables and mix it all in lunch boxes, in the car and off we go. It's a perfect dish to make to bring on the camping trip, serve on the picnic, bring on the boat trip, or just when you want to eat healthy during the week end, and don't have much time to prepare dinner.

This salad require minimal cooking and are a perfect side dish to different summer dishes. It is seasoning with different spices and just some olive oil as a dressing making a lovely combination, well suited for grilled dishes. It is also good to squeeze some fresh lime juice on top of the salad for extra flavor right before serving.
This creamy chicken sauce is both fast and easy to prepare. The tarragon together with the oregano and the olives gives it a Mediterranean touch. The dish fits both in the middle of the week or for a Sunday dinner.
