My kids loves Swedish chocolate balls, and can eat a whole bunch of them at once. I wanted to find a way to make them with both less calories and sugar, and started to wonder how. I stumbled over a recipe made with chocolate pudding, but still thought it was a bit too sweet for my taste. Then I thought of a friend of mine that likes to eat a low fat, protein enriched chocolate pudding, so why not use it to bake with. The result is a healthier snack I can serve the kids without feeling I'm just giving them a spoon full of sugar.
