When I was asked to bring some saffron treats for a gathering a while ago, I wondered for a while what to bake. I came up with a variant of the popular Swedish chocolate ball. I thought what can be better than having a Swedish fika with a classic coffee bread with a little twist. These delicious homemade saffron balls are covered with chocolate and dipped in coconut flakes.

Ingredient List for 10 servings:

150 gr Graham biscuits

120 gr Butter

60 gr Icing sugar

0.5 teaspoon Vanilla extract

1 teaspoon Vanilla sugar

200 gr Milk chocolate

100 gr Grated coconut flakes
Instructions:

With a hand blender mix the biscuits to crumbles.

Mix together with vanilla sugar, icing sugar and saffron.

Add the vanilla extract and butter an mix well.

Roll preferred size balls.

Place in the fridge for 1 hour.

Melt the chocolate.

Pour the grated coconut flakes in a bowl.

Roll the balls in the chocolate and immediately after in the coconut flakes.

One of the Swedish classical small dry cookies. Easy to make and you can keep them in the freezer for a few month so you always have cookies at home for "fika" if you will get company. These cookies normally have raspberry or strawberry jam on top, but you can use any jam you like.
This is a homemade cake with a different type of bottom as it is made with almond pastry. This cake will not be a favorite among kids, it is meant for adults as the coffee taste comes out quite nicely. Though even if you are not a fan of coffee, the mix with almond gives it a lovely touch. It is perfect to serve this cake after a romantic couple dinner or when there will be only adults at the party !
