I came up with this treat for the event, a wonderful, elegant saffron and white chocolate mousse. In Sweden, every Sunday from 4 weeks before Christmas you meet friends and family to eat desserts and cakes, all made with saffron.

With this recipe it is simple and easy to make a super moist and creamy carrot cake. The secret ingredient to make it dense is actually to add olive oil. You can find carrot cakes with or without nuts, and with different flavors. This recipe contains cinnamon and is covered with a big layer of cream cheese.
This is a soft cake with a coconut and butter frosting. The cake looks a bite pale but it melts in your mouth when you taste it. It will be a big hit with both children and adults. The recipe is for approx sixty pieces so it is perfect for a birthday party or a big gathering.
