This is my go-to recipe in the summer when we have guests over for an outdoor dinner party. I love that you can prepare the pie one day in advance, so you have more time to spend with your guests. This creamy pie can be serves as a starter, as a main dish or part of a buffet. I never get any leftovers but if you do, you can enjoy another piece the day after for lunch.

Ingredient List for 10 servings:

100 gr Grated cheddar cheese

100 gr Grated strong cheese

300 ml Heavy cream

3 Eggs

1 pinch Salt

Button Pie crust

125 gr Butter
Button
180 gr Flour
Button
30 ml Cold water

Oven temperature:
200 degrees Celsius
Instructions:

Mix the flour and the butter with your hands.

Add the water and work it quickly in to a ball.

Press the dough in a pie form, make sure to evenly cover the bottom and the edges.

Pick the bottom with a fork a fork on a few places.

Place the bottom in the fridge for 30 minutes.

Preheat the oven at 200 degrees Celsius.

Place the pie crust in the middle of the oven for 10 minutes.

Take out the pie crust and pour the grated cheese over the bottom.

Whip the eggs together with the heavy cream and salt. Pour it over the cheese.

Place in the middle of the oven for another 25 minutes.

Take out the pie and let it cool down.

Place in the fridge over the night, this pie taste better the next day and cold.
